Salmon and Tomato Pasta ala Lhen
Today is another yet, Chef-Wanna-Be-Day for me. I am cooking pastaaaaa... thrilled and excited to try this new recipe (which is actually not a new recipe to everyone but a new recipe for me cause I am cooking it the first time).
I remember back then when I was a little kid that pasta, more so, spaghetti (which is the only kind of pasta I know before) is a food on the table only during occasions like birthdays and Christmas (maybe because we were thinking it is expensive to cook back then and that it is special). I like it sweet and meaty and it was heaven all the time. The memories of birthdays, getting an award in school or Christmas time comes back real time now that I am actually thinking Mom's special spaghetti.
Not sure if it's just the age, (Yes! I am blaming aging again!) but I had actually change preference wanting new taste on my pasta plate. I like it sour now not to mention, I like seafood in it better than meat. And, yeah, pasta now can be cooked anytime :) in my house.
Although I like tomato based pasta, I never cooked it for myself before so I was half hoping this will turn out well.
So, here's what I prepared in my kitchen counter for this meal (pardon the measurements as I don't do measuring on my ingredients... I am more of a tantsahan person, but I won't say it is tsamba tsamba taste too):
1 can of fresh diced tomato
1/2 of 450g Fiesta spaghetti noodles
1/2 Lemon - squeezed to juice
2 teaspoon of Basil Leaves
3 tablespoon of Olive Oil
Garlic
Salt and Pepper
1 Slice of Salmon (baked or steamed)
Cooking Instructions:
1. Prepare the Salmon. (You see one thing I still need to conquer yet in the kitchen is how to use the oven, so for now I am steaming the salmon to cook) Rub pepper and salt to taste. Steam the salmon.
2. Prepare another pan and cook the noodles. Heat water and add salt and oil so it wont stick.
3. On a separate bowl, mix the diced tomato, lemon juice, basil leaves, olive oil, pepper and salt. Chop the now cooked salmon and add it to the sauce. Drain the noodles and add it too.
If you have a Parmesan cheese, (which is not available in my house right now) you can add it too.
Eat and enjoy!

Since we do not have any bread, I just took whatever is there in my kitchen cabinet and it is actually my kid's mamon, hehehe. Also, it was a jackpot that the apple juice was still there.
Blockbuster with my hubby. Whom, I think is a hard to please guy when it comes to home cooking since he most of the time compare his mom's cooking to mine, which is kinda annoying.
So, this is the bloopers when I was cooking this pasta. You see in the picture I have garlic there? I didn't use it and decided to use the powder one instead. While I was multi-tasking with work related tasks and cooking, I was not paying attention to the one I pick up assuming it was garlic and just pour it in and had almost half of the McCormick bottle of pepper mix in my sauce. Good thing I had poured it in one portion so I was able to scoop it and take it out the bowl.
All in all, I think the first time experience of cooking tomato and salmon pasta was all good. I had achieved the taste I wanted and hubby was able to eat more that what I am expecting him too, which I think one of the most rewarding part considering he is also one person who is not a fan of other pasta than carbonara and sweet style spaghetti.
